Continuing with the series of cold meat and sausage casings, this time it is the turn of artificial casings, and it turns out that in Spain we have one of the most influential companies in this sector worldwide, VISCOFAN SA.

Artificial casings are necessary to cope with the global production of cold cuts and sausages due to their production process automation characteristics and because they can be better adapted to the products to be produced.

We find three types of wrappers at a synthetic level: collagen, cellulose, and plastic. I summarize its characteristics below:

collagen

It is the most similar to the natural casing, and you only have to look at its composition since it is collagen. Of course, the appearance that appears is artificial because everything is the same, which makes the difference the most, not having imperfections, but from time to time.

The collagen comes from the hides (skins) of the cows, and after successive treatments (many), they are converted into the tube needed to stuff the food.

The variety of calibers, adaptations to the product and process, better machinability, and its much more comfortable conservation and sterility make it a competitor with many advantages over the natural casing.

In my opinion, the average consumer does not realize if the casing is of artificial or natural origin, so collagen is more than justified.

Cellulose

Do we eat cellulose? Honestly, it would be like eating a sheet of paper, but luckily we don’t eat it because the sausages are peeled in production after they have been cooked. I repeat, they are peeled, this may attract attention to many, but it is like that; you can see a peeler below.

Lately, in a supermarket, I have come across some sausage stuffed in cellulose and unpeeled because they take advantage of the wrapper to put ingredients and the rest of the instructions, among which is peeling before eating.

It is a much more resistant casing than collagen and is cheaper, and it is widely used for making cooked sausages.

Plastic

It is the most common in large-caliber cooked sausages, for example, mortadella, chopped, etc. The most important characteristics are its resistance to stuffing, clipping, and cooking. They are also waterproof and further prevent water loss and gas ingress, such as oxygen, into the products.

The three types can come in their smooth form or are already folded and ready to stuff if they are in stick form.

In addition to these three artificial wrappers, there are others such as:

  • Fibrous casings: Those used for chopped chorizo ​​and large-caliber sausages. Their resistance and their permeability characterize them.
  • Collagen sheets: To wrap hams.

bovine casing
