Pizzelle are traditional Italian waffle cookies made from flour, eggs, sugar, butter, or vegetable oil and flavoring. Pizzelle can be complex and crisp or soft and chewy depending on the ingredients and method of preparation. It can be molded into various shapes, including in the form of cannoli. Pizzelle was originally made in Ortona, in the Abruzzo region of south-central Italy. The name comes from the Italian word for “round” and “flat”; This is also the meaning of the word pizza.

One of my favorite cookie recipes! I make these authentic Italian pizzelle every year for the holidays. They’re unique in their flavor and texture, but just like pecan candies, soft sugar cookies, and spritz cookies, they’re as dainty as can be and just as delicious with a cup of coffee, tea, or hot chocolate!

The first pizzelle cookies were made in the Abruzzo region (geographically located in central Italy) in the 8th century.

These highly recognizable Italian cookies get their shape by flattening the dough between two hot iron plates (just like waffles). These plates (rectangular or round) often had the pattern of the family crest engraved on them.

Today, the pizzelle maker’s footprint is a geometric/waffle design, a flower, or snowflake pattern.

Like these Soft Amaretti Cookies or these Almond Biscotti, this recipe is considered a classic Italian cookie. As such, it requires essential ingredients.

  • Eggs. An essential ingredient.
  • Sugar. Just the right amount.
  • Flour. Common all-purpose flour.
  • Petroleum. So is! A recipe for pizzelle with oil.
  • Essence. A traditional recipe calls for anise, but there are so many options!

The amounts and type of fat used will determine the texture and thickness of these cookies. As for the flavoring, it is a matter of taste. My preference is the flavor from my childhood, vanilla and anise.

Let me show you how to make this Italian cookie recipe with a pizzelle maker easily.

Instructions

Start by beating three eggs until they start to thicken. Next, add the sugar (½ cup) and beat for a few minutes. As you can see, I like to use my whisk. If you find it easier to use your stand mixer, be sure to use the whisk attachment.

Next, add the oil (¼ cup), vanilla extract (1 teaspoon), and anise extract (1 teaspoon).

Continuing, add the dry ingredients, which consist of flour (1¼ cups), baking powder (¾ teaspoon), and salt (just a pinch).

That’s it! Now you have the perfect dough.

Now comes the fun part!

Heat the grill and drop about a tablespoon of batter in the middle of each plate. Drop the top heating element, and in about 45 seconds, your cookies are ready.

Since individual manufacturers have different heating elements, check your owner’s manual for specific times.

What to do with pizzelle cookies

When removed from the iron plate, they are highly malleable. You have seconds to get the shape you want, and you can then create beautiful pizzelle desserts. Transform the body from flat to curvy.

Here are some dessert ideas:

Make a bowl or cup by pressing freshly made pizzelle into a bowl. In just a few seconds, you have a crispy bowl shape that can be filled with whipped ricotta (recipe found in this post strawberry parfait ) and topped with macerated strawberries. Throw in some blueberries, and it becomes the perfect 4th of July dessert!

Wrap the “fresh off the press” pizzelle around a wooden dowel or cannoli tube to make a cannoli shell. Once they harden, you can fill them with ricotta cheese sugar.

Use a cone-shaped mold to shape the hot pizzelle. Notice how in seconds, the pizzelle harden. Fill with ice cream or any other filling to make the perfect summer treat.

Advice

  • This recipe comes together quickly in one bowl. Although it is unnecessary to use a stand or hand mixer, feel free to use one if it is easier for you.

Can I make the chocolate pizzelle recipe?

Yes. Use 1 cup all-purpose flour sifted with 1/4 cup unsweetened cocoa powder (remove anise flavor, use only vanilla).

Can I make this pizzelle recipe with anise oil?

Yes. Replace the amount of anise extract with ¼ teaspoon of anise oil.

Can I make them vegan?

Yes. These are the changes you need to make. Replace the three eggs with three tablespoons of ground flaxseed and nine tablespoons of room temperature water. It would help if you had ¼ cup plus one tablespoon of oil. Also, check to make sure you’re using sugar that isn’t processed with bone char.

What’s the secret to getting the perfect pizzelle that stays crispy?

  • as soon as you take them out of the pizzelle maker, lay them flat (you can use a cooling rack);
  • do not stack them as steaming will cause them to lose their crispness;
  • Once you’re done, let them air dry for a few hours.

How do I store the pizzelles, so they stay nice and crisp?

  • wrap in foil;
  • place in cookie or coffee tins;
  • Place in paper bags.

Pizzelle stored this way will keep well for a few weeks. Whatever you do, please don’t put them in plastic or airtight containers (like Tupperware) as they will go soft.

In my nonna’s Italian dialect, she would refer to these simple cookies as “.”

My dad’s mother was born in Ripabottoni, in Campobasso, in the Italian region of Molise. I have many fond memories of my mom and grandma making these special treats, especially at Christmas.

I remember eating pizzelle faster than they could make them. Back then, my mom and grandma made the ferratelle one at a time, with a long-handled griddle. I still have it, and it’s in the photo above.

Ingredients

  • 1¼ cups all-purpose flour 177 grams
  • ¾ teaspoon baking powder
  • pinch of salt
  • Three eggs at room temperature
  • ½ cup of sugar 100 grams
  • ¼ cup vegetable oil
  • One teaspoon vanilla extract
  • One teaspoon anise extract optional

Instructions

  • Preheat the pizzelle griddle.
  • Sift together the flour, baking powder, and salt in a medium bowl. Set aside.
  • In a large mixing bowl or the bowl of an electric mixer fitted with the whisk attachment, beat the eggs until foamy and beginning to thicken (about 3-4 minutes).
  • Add sugar. Continue beating until well thickened.
  • Add the oil and extracts. Mix well.
  • Slowly add the flour mixture until well combined; the dough will be smooth and sticky.
  • Drop one tablespoon of batter into a hot pizzelle press.
  • Close lid and cook 30 to 45 seconds or until lightly browned.
  • Remove from the press with the help of a fork.
  • Transfer to a flat surface or mold into the desired shape.

Grades

The special equipment needed to make this recipe is a pizzelle griddle. To make chocolate pizzelle, use 1 cup all-purpose flour sifted with 1/4 cup unsweetened cocoa powder (I don’t use vanilla anise flavored).
