Electric oven vs. microwave: which one should have more in the kitchen?

They have similar sizes, doors, knobs, and use – both heat or prepare food – but the differences between their functions are immense. To find out which is more essential, three specialists give their verdict.

They are two compatible appliances that can live perfectly together in peace and harmony. Still, today, when homes are smaller, and kitchens are increasingly narrow, there is not always room for both. It’s you, or it’s me, they say to each other the electric oven and the microwave, two appliances that occupy almost the same space, that have similar prices, but that differ in their functions.

Yes, they can both heat cold food; it is true, with any of them it is possible to melt the cheese of the sandwich; That’s right, both also can cook certain foods. But the way each one does it is very different. Therefore the results will be dissimilar, and so will their possibilities.

If only one fits in the small kitchen counter, which one would be more convenient to have there? The microwave oven or the electric convection oven?

Heat versus radiation

To know which one to choose, you first know how each one works. In the case of the microwave, it owes its name to the high-frequency electromagnetic waves it emits, similar to those of a telephone or radio

Their range is shorter, which allows them to interact with the polar molecules of the water, making them vibrate and causing them to collide with others, thus increasing the heat.

As Marcelo Maillard, chef instructor at Duoc UC, Antonio Varas headquarters, explains, “what the microwave does is heat the moisture in the food, which is why it can reach a high temperature in a short time at the core of the preparations.” That is why a cup of milk, which is completely liquid, can be hot after being in the appliance for less than a minute.

You have to know that these small waves do not penetrate more than three or four centimeters into the food, which produces what so many have experienced: that the bowl of rice, after a minute in the microwave, is hot on the outside but cold inside

For the heat to arrive evenly, it is best not to pile up the food and distribute what will be cooked across the entire width of the plate.

How to get the most out of your microwave

But the microwave isn’t just for reheating already-cooked meals. Maillard says that some preparations can be made there in a few minutes, “such as sponge cakes, mug cakes, ‘roasted’ potatoes, white rice, cheese soufflé, and other not so complex recipes.” Here you can review a compilation we made with some of them.

On the other hand, the electric oven uses convection to convert electrical energy into heat. It does this using resistances —generally nickel and chrome— located inside the appliance, above and below, which increase the temperature inside.

Like a traditional gas oven, only much faster, the heat is maintained throughout the vault, which makes it easier, according to the academic Duoc, to “regulate its intensity.” Thus, it is easier to control the temperature—lower if we only want to heat a dish; greater if cooking a pizza—and manage the result of the different preparations.

microwave for the rush

“I have both ovens in my house,” says Nicolás Gárate, academic director of the International Gastronomic Academy and chef advisor to Oster. “But I only use the microwave when I’m in a rush and want to heat a cheese sandwich or a cold dish quickly.”

He does not use it for much more since cooking in this appliance does not seem so attractive to him, either because of its consistency and appearance—food is not crispy or golden—and for nutritional reasons.

“Cooking through radiation, especially at high power, produces a loss of nutrients and molecular structure that damages the product,” he says. According to him, you will prepare in less time and less nutritional contribution.

There is a lot of debate about how much food goes bad in the microwave. There are few, like Gárate, who avoid it due to this supposed loss of properties, but the truth is that any heat can break down nutrients, be it the embers of a barbecue, a water bath, or the action of these appliances. And according to this article from Harvard Medical School, exposure to microwave heat is shorter than most; such fragile nutrients like vitamin C are better preserved when you cook broccoli in it than in a pot.

“The cooking method that best retains nutrients is the one that heats the food for the shortest time and the one that uses the least amount of liquid possible,” says the text. “And the microwave meets those criteria.” The WHO has also confirmed that the main risk of using the microwave is the same as running another oven: burning yourself with the food you have just heated.

Its other advantage is energy consumption. Normally, microwave power does not exceed 900 W, much less than the more than 2000 W that an average electric oven has, a difference that will surely be noticed in the electricity bill. “But the main thing,” says Maillard, “is how quickly it performs its main function, which is to reheat food. Especially thinking about the dizzying nature of daily work”.

More about Kitchen

What about the defrost? The microwave is used the most, especially when we forgot to take the meat out the night before and we have to speed up the thaw so that the lunch menu is not frosted chicken. According to Garate, he has gotten several of them out of trouble, but it is not convenient to abuse that function.

“If you try to thaw a chicken or microwave it just by popping it in and giving it a few minutes, you’ll end up cooking it,” he says. “To defrost well, planning is essential.”

The chef of the International Gastronomic Academy says that one of the biggest risks in the kitchen is not knowing how to defrost. “If the microwave is dirty and you put a meat to defrost directly in it, you can contaminate the product in that process,” he warns. The best thing, he says, is to move it from the freezer to the refrigerator the night before and let it thaw slowly there.

Electric for the versatile

The popular cook and communicator Connie Achurra is an absolute fan of the electric oven. “I love it; I use it for everything,” she says. Although she also has a large traditional gas oven, she hardly uses it. “I prepare everything in my electric oven, which is simple, tiny, but it is by far the kitchen implements that I use the most. I use it for baking, preparing food, or toasting bread.

Therefore, he does not have or need a microwave. “I know that it is very useful for reheating and defrosting, but I don’t prefer it for cooking: I don’t like how microwave cooking turns out.”

On the other hand, a good part of the preparations he shares with his 1,200,000 followers is made in his humble electric oven, where there is not much room for more than a couple of medium-sized dishes. There he makes brownies, cookies, cakes, and biscuits, as well as savory recipes roasted vegetables for his creams, soups, and hummus. “I use it for everything,” he says, “and since I’ve had it for a long time, I know it perfectly; I know exactly how many minutes and what temperature I need for each thing.”

Electric oven Ursus Trotter UT-BACKOFEN 48 liters

He always occupies the heat of both resistances—the one above and the one below—and, as seen in his recipe books and social networks, that works very well for him

Especially with the bread, “I find that when you bake it there, it is exquisite, crunchy but also soft. The cookies are also very good, and they are made very quickly.”

According to Marcelo Maillard, an electric oven can perfectly fulfill many of the functions of a gas one, such as “roasting and cooking meat of all kinds, vegetables, tubers and an endless number of simple and complex preparations. You can also reheat food, better preserving its original texture.”

When buying one, Garate first recommends discarding for price. “If you buy 15 Lucas, it will toast your bread and not much else,” he says. If the idea is to take advantage of it and use it as a substitute for the gas oven, he also suggests paying close attention to its capacity per liter; if it is very small, the sources will not fit in it, and there is little that can be prepared in it.

“You also have to check the range of temperature it has —hopefully it reaches 250º— and the size of the resistors” since that depends on how homogeneous the distribution of heat is. “Now there are ovens that come with the function of air fryer, and for me, they are a tremendous help. since they incorporate a fan that increases and distributes the temperature better”.

conclusion

Marcelo Maillard, the chef instructor at Duoc UC, finds it difficult to lean towards one or the other since it ultimately depends on the lifestyles of those who are going to use them. “If you’re someone who only cooks sporadically and eats mostly processed foods, then I would recommend a microwave,” he says.

But if the intention is to cook daily or frequently, “then I suggest the electric oven, which is also much more versatile when cooking, since you can make a greater number of recipes with optimal results.”

Acura thinks the same: “if someone is setting up their kitchen and has to choose only one of the two, then I highly recommend an electric oven.” But if there is a budget, he advises going for a Samsung model that combines the two functions in a single machine: the Korean brand’s Hot Blast microwave, which includes a grill and the possibility of using it as a convection oven.

“I find that this is already perfect: it has all the benefits of the microwave but also the richness of the electric oven and in a single device, without you needing a kitchen so large that both can fit

Samsung Hot Blast MC32K7055CT 32 liters

Garate has no doubts either and is leaning towards electric ovens. He defends it because “they are super friendly to what people need today, they resist a greater variety of materials inside—such as steel and aluminum sources—and they include new functions every time.” His suggestion is the Oster oven with five functions, including hot air frying.
