What size cocotte to buy?
Keep it real. Adjust to your needs. Cocottes are very heavy. Having a hulk in the closet is not a good idea unless you will use it.
Don’t be stingy, either. I made this mistake with the purchase of my first cocotte. I opted for the 20 centimeters one because it was lighter and cheaper; it seemed enough for two people. Well no. Now I regret it. Too fair.
My recommendation:
- For one person: Diameter of 20 centimeters.
- For 2 – 4 people: Diameter of 24 centimeters.
- For 5 – 6 people: Diameter of 26 centimeters.
- For 7 – 8 people: Diameter of 28 centimeters.
The diameters of 24 and 26 centimeters are usually the most recommended.
Do the shapes of cocottes matter?
Yes, the shape matters. It is of little use to buy an oval casserole if you cannot make special preparations. Or an iron pot, like Obelix’s, if your thing is rice.
As a general rule, buy the round cocotte. You can do everything—even bread.
- Cocotte Doufeu : For slow cooking. Ice is placed on the lid to increase internal condensation. It can also be used as a regular pot.
- Oval: Ideal for meats: chicken, lamb, rabbit, suckling pig, roast beef

Better the enameled ones or the ones without coating?
