What is the best cocotte?

Do you remember those stews that take you back to childhood, whose taste and smell you can still enjoy in your memory? They were probably cooked in a casserole very similar to the cocotte. And there is perhaps one in the house of your older relatives, maybe your grandmother.

The cocotte has that vintage style reminiscent of homemade meals that bring back such good memories. Would you like to have a cocotte at home? We show you the most popular models and all their secrets.

LA RAE says that “cocotte” comes from French and is related to paper bow ties. Can be. But no, here we are talking about the typical cast or cast iron pot. The one of all life, only now more beautiful and modern.

1. Which one to buy in 2022?

It has its complication. Because their prices are relatively high, and it is often scary to take the plunge, and because you don’t want to end up with a useless pot in the kitchen. Read to the end to find out.

2. Cocotte Le Creuset: the bestseller

The best known (and sold) cocotte has a first and last name: Le Creuset Evolution. But just because it’s a global bestseller doesn’t mean it’s the cast iron pot you’re looking for.

Evolution works very well. It has an intermediate total thickness and adds interior and exterior vitrification for ease of use. The food does not stick unless you do barbarities (clean it with a scourer and things like that).

Another point in its favor is the weight. It is more manageable than the other options.

Offers a lifetime warranty Not to extend me; here I delve into the Le Creuset cocottes.

You have it discounted on and Claudia&Julia.

The cocotte par excellence

3. Cocotte Staub: The Hulk Option

Staub’s warranty is reduced to 30 years. And yet, this casserole is no worse than Le Creuset, just different.

More robust and heavier than the previous one. With enamel so that food does not stick. It offers an unmistakable style; it has a retro air, a unique personality. The quality of Staub is not disputed; it belongs to the exclusive firm Zwilling.

You will like it if you appreciate full pots. You won’t like it if you’re looking for manageability (they weigh “half a ton”).

I don’t want to spread. I have dedicated a special section to understand better what Staub cocottes are like. I have also compared Staub and Le Creuset with the differences between the two.

The most robust cocotte

4. Cocotte Lodge: the “purest” alternative

And we come to the more purist alternative to Le Creuset and Staub.

Lodge makes unglazed iron cookware. Casseroles like before. 100% authentic.

The Lodge Logic model incorporates a factory curing carried out with natural oils. I recommend you do extra curing before using it. It is the best option if you have a gas or wood stove and do not mind complicating yourself with the curing.

With this cocotte, you will have to be more careful with cleaning and storage. I recommend you spread it with a bit of oil to prevent oxidation.

The most authentic cocotte

5. Cocotte Amazon Basics: the cheap option

Sometimes the budget is not enough to buy one of the best cocotte of the year (Le Creuset, Staub, or Lodge), but that does not mean that you cannot buy a cheap cocotte.

Are they worth it?

There is everything. But you will not be able to ask the cheap options for the same quality, durability, and reliability as the previous ones. But work. They are not wrong.

My recommendation is that you choose the Amazon Basics cocotte. This brand offers unbeatable value for money. It is far from the top 3, but it complies.

Reasonable thickness. Good quality. Reasonable price.

You can buy it on Amazon

What size cocotte to buy?

Keep it real. Adjust to your needs. Cocottes are very heavy. Having a hulk in the closet is not a good idea unless you will use it.

Don’t be stingy, either. I made this mistake with the purchase of my first cocotte. I opted for the 20 centimeters one because it was lighter and cheaper; it seemed enough for two people. Well no. Now I regret it. Too fair.

My recommendation:

  • For one person: Diameter of 20 centimeters.
  • For 2 – 4 people: Diameter of 24 centimeters.
  • For 5 – 6 people: Diameter of 26 centimeters.
  • For 7 – 8 people: Diameter of 28 centimeters.

The diameters of 24 and 26 centimeters are usually the most recommended.

Do the shapes of cocottes matter?

Yes, the shape matters. It is of little use to buy an oval casserole if you cannot make special preparations. Or an iron pot, like Obelix’s, if your thing is rice.

As a general rule, buy the round cocotte. You can do everything—even bread.

  • Cocotte Doufeu : For slow cooking. Ice is placed on the lid to increase internal condensation. It can also be used as a regular pot.
  • Oval: Ideal for meats: chicken, lamb, rabbit, suckling pig, roast beef
  • Cocotte high: Type pot. Perfect for stews or broths.
  • Cocotte low: The best for dry rice, broth, and risottos. Also for cakes.
  • Mini pots: Mainly for presentations. I explain how the mini cocottes work.

Better the enameled ones or the ones without coating?

Most cocottes that we find on the market incorporate an enamel or vitrified. Inert material No toxic or weird stories Those vitrified pots are more comfortable because they do not need seasoning. Easy to cook. Easy to clean.

But brands (such as Lodge) do not add this glazed layer. Identical versions of our grandmothers include a factory curing based on natural oils.

Which one to buy? If you do not want to complicate yourself, it is best to choose an enameled one. A traditional unglazed version is an excellent option if you’re a purist and don’t mind the curing process.

Guide to buying a cocotte

A cocotte, also known as a “Dutch oven,” is a kitchen utensil with a high price due to the material quality used in its manufacture and the qualities that allow the cooking of any dish to acquire a perfect flavor and point.

If you have not yet tried the experience of cooking in a cocotte, we invite you to learn about all its characteristics and to see why it is a kitchen utensil that you should include in your set of saucepans.

What is a cocotte?

The name “cocotte” comes from the French language and can be translated as “pan, pot.” It is made of cast iron with an enamel layer that is very resistant to high temperatures. It can be used in all types of kitchens, including the oven.

Cast iron allows the heat to be distributed evenly, allowing food to cook over low heat while retaining all its flavor.

On the other hand, the hermetic closure provided by the lid causes condensation of water to be produced inside that hydrates the food and gives it juiciness.

How does a cocotte work?

A cocotte can be used in any cooker and oven for slow cooking. So if you are looking for that homemade and authentic flavor of classic stews, the cocotte is the option you need.

You have to be careful when controlling the fire so that the heating of the cocotte is gradual to prevent the enamel layer from cracking.

The stews are simmered, but the key to using the cocotte is compared to other casseroles: sweeter hashes, juicier meat and fish, and 0 loss of liquids to enhance the flavor.

4 Reasons to buy a cocotte

Homogeneous heat distribution

The cast iron with which the cocotte is made allows the heat to be distributed inside in a homogeneous way. It makes cooking uniform while preserving the nutritional properties of the food.

This feature will allow you to cook large pieces, getting them to cook thoroughly both inside and out.

health-friendly material

The iron in cocotte does not release any harmful substance to health even when it reaches high temperatures. It is also an excellent option for casseroles with non-stick coatings incorporated in which chemical substances that can affect health are used.

Durable and resistant

Cocottes are a particularly resistant utensil that, if cared for properly, can be kept in perfect condition for a long time. . Neither high temperatures nor continuous use affects its structure, so the increased investment, in the long term, is very economical.

Very versatile

You can make almost any recipe you can think of with a cocotte, sweet or savory. In this way, you will avoid buying other additional accessories because you can make many different dishes with a cocotte. Added to all this is that it does not mix flavors or smells.

Types of cocotte

Round and oval cocotte

The round cocotte is the most common type in which you can cook from stews and soups to meat or fish or any other vegetable dish. You can find it in many sizes, and it is the most versatile model.

The oval cocotte is designed to prepare a larger quantity of food or to be able to introduce longer and larger pieces of meat or fish, whole. In terms of cooking, it does not differ from the round cocotte except in its shape.

Oval cocotte are less common, but if you want to buy one of these models, we recommend Tradifonte’s oval cocotte, with a large capacity that reaches 9 liters.

high or low cocotte

The high cocotte is the most common and is usually used for stews that need more space or more voluminous meals.

For its part, the low cocotte is preferred for making soups or creams, including broth rice, since it is less tall and it is straightforward to remove the interior. As a differentiating characteristic, it should be noted that its shape allows it to heat up earlier.

If you need a low cocotte, we recommend the Le Creuset model in orange, with a capacity for six people and exceptional material quality.

Cocotte Doufu

It is a cocotte mole that works particularly because ice increases the condensation effect inside. The ice is placed on the upper lid, and it is indicated to carry out exceptionally long cooking.

Design

You will find that there are cocotte with very different designs, from the classic round or oval cocotte to those that are more or less tall or small individual cocotte. You can also find cocottes in many different colors for those who like to add a touch of color to their kitchens.

The handles are usually designed wide enough to be easily picked up. You will also see that the knobs are usually stainless steel to resist heat better. In some cases, you can find some models of cocotte that incorporate accessories such as a steamer, to be able to cook twice.

If you are looking for a cocotte with steamers to get the most out of it, we recommend the Staub cocotte with steamer.

Ability

Depending on the number of people you usually cook for, you must take this detail into account. So that you can have an indicative idea of the diameter you need, and of the capacity, depending on the number of diners, you must take into account the following:

  • 20 cm diameter and 2.5-liter capacity: 2-3 people
  • 24 cm diameter and 4.2-liter capacity: 4-6 people
  • 26 cm diameter and 5.4-liter capacity: 6 people
  • Diameter of 30 cm and capacity of 8.2 liters: 8-10 people

You also have the option of choosing small individual cocottes to make small portions. In this case, we want to recommend the set of 4 mini cast iron cocotte with 10.5 centimeters in diameter.

Material

The most common material used to make a cocotte is cast iron, although you can find cocottes made of ceramic. The iron cocottes are heavier, but they are also more resistant and can be used in any kitchen.

Ceramic cocottes, on the other hand, are lighter and more manageable. They may be more susceptible to damage from knocks, but they work similarly to cast iron cooking pots in terms of heat conduction. An example of a good quality cocottes made of cast iron is the Puricon cocottes, with an anti-corrosion enamel that increases its durability.

Best cocottes brands

  • Staub: committed to the utmost excellence in each of its products, the French brand has the approval of great chefs who rank it as one of the best in high-end culinary products
  • Tefal: one of the most established brands in the world of small household appliances. The Tefal cocottes has an elegant and modern design that has nothing to envy the most recognized brands.

How do you clean a cocottes?

First of all, you must wait for the cocottes to cool completely before washing it, as a solid thermal shock can damage the enamel.

Clean it with the help of a soft sponge and soap. If there are food residues stuck, fill it with warm water and add a few drops of soap. Let it sit, so the food comes off easily.

Some cocottes can be put in the dishwasher, so cleaning is much easier, and the enamel will be kept in better condition.

Can I use a cocottes in the oven?

Yes, the cocottes is designed to withstand high temperatures, so you can put them in the oven and constantly place them on a rack or oven tray, never on the base of the range.
